{ Recipe } Spicy Broccoli & Carrot Creamy Bites (Dairy & Gluten Free)

Recipe

Ingredients

  • 1 Egg Whisked
  • 1/2 Finely Grated Carrot
  • 3 Small Broccoli Heads (no stems)
  • 1/2 Cup Rice Crumbs
  • 3/4 Tub Better Than Cream Cheese (Tofu/Soy)* (BTCC)
  • 1/4 Tsp Cayenne Pepper
  • 1 & 1/2 Tbsp Chilli Sauce
  • 1 & 1/2 Tbsp Olive Oil
  • Cracked Pepper

Method

Baking

  • Preheat the oven to about 200C.
  • In a large bowl, add the finely chopped the broccoli heads. Make sure there aren't any hard stems in there.
  • Grate the carrot into the bowl.
  • Add the 3/4 of the chilli sauce into the mix. Use a sauce you like, any liquid chilli sauce will do.
  • Whisk an egg and add it to the bowl.
  • Add the rice crumbs and the cayenne and cracked pepper seasonings.
  • Finally what binds it all together, add the Better Than Cream Cheese!
  • Use a wooden spoon to combine and mix the ingredients well, make sure it's all coated and binds together.
    • At this point decide if you need more BTCC or egg to keep it together.
  • Grab some gloves (or wash and use your hands) and make little balls or bite size shapes.
    • I even made patties with this mixture, which is a nice vegetarian option for burgers.
  • Place the bites onto a baking tray lined with baking paper (saves cleaning the tray and so they don't stick).
  • Put in the oven and bake for 15-20 minutes or until golden.
  • Take out of the oven and let them rest and cool for about 5-10 minutes. This hardens them up so they don't fall apart and so they aren't too hot.

Dipping Sauce

  • I used the same chilli sauce I used in the recipe, pour the other half of the measured sauce (or more if you like more, I like more hot!!) and add some of the olive oil to a small Ramekin Dish* mix together and dip away!

About My Healthy Eating Plan...

All of my recipes are prepared, cooked and eaten by me and my family (my kids are very fussy, they usually have another type of meal). These are the meals I like and can eat! I have food intolerances and I am on a fitness journey with a high protein varying carb and fat intake.

I'm unable to consume dairy, high fructose and gluten. These meals are usually made up on the spot with what I have in the fridge or I preplan them if I want to. I like freshly cooked meals rather than reheating, and I like cooking. My meals will change the closer I come to bikini competition time in October 2016.
