{ Recipe } Breakfast - Flat Eggs with Avocado, Corn & Tomato Spicy Salsa


  • 2 Flat Eggs
  • 2 Cherry Tomatoes quartered
  • 1/2 Avocado diced
  • 1 Tspn Corn Kernels
  • 1 Tbsp Cucumber quartered
  • 1 Tspn Fresh Lemon Juice
  • Cayenne Pepper
  • Cracked Pepper

Note: I made this salsa the night before at dinner, so my measurements above are based on this serving, to save time, money and effort, make a batch of this in advance and increase your ingredient quantities to optimise your ingredient use! ;)

Tip: add lemon juice To stops the avocado from turning brown.



  • I cook my flat eggs in a small fry pan with no oil, I put a splash of water in the pan at least 2 ml deep, when the water is hot, I crack the eggs in and turn down the heat to low, cover for a few minutes then remove the cover (especially if I want runny eggs).


  • Cut the cooked corn fresh off the cob (I do not used canned but you can if it works for you best), add to a bowl.
  • Cut the cherry tomatoes into quarters, add to the bowl.
  • Cut the cucumber into quarters, add to the bowl.
  • Cut the avocado into small diced pieces add a squeeze of fresh lemon juice from a quartered lemon, add to the bowl.
  • Season with cayenne and cracked pepper.

I simply put the eggs down on the plat first, then top with the Salsa. I like my food to look good when I eat it, adds to the experience! So make it look appetizing and you will enjoy it more :)
