{ Recipe } Lunch - Moroccan Spiced Grilled Chicken with wholemeal Cous Cous & Veg

I never measure unless absolutely necessary, just grab it, cut and chuck it in ladies ;) Measure for your serving needs and taste! x

  • Wholemeal Cous Cous
  • Diced Chicken Fillet
  • Halved Kalamata Olives (Pitted)
  • Sliced Red Capsicum
  • Diced Asparagus
  • Diced Green Beans
  • Diced Baby Corn
  • Fresh Hot Red Chilli
  • Fresh Lemon Juice
  • Moroccan Spice (McCormick's)
  • Chilli Flakes (McCormick's)
  • Chopped Continental Parsley


Cous Cous

Add hot water, Moroccan Spice and chilli flakes to the Cous Cous and stir with a fork until nice and fluffy.

Put aside to prep and cook the ingredients.


Cut the chicken into bite sized diced pieces and put them in a bowl.

Add the same Moroccan Spice and chilli flakes to the chicken with some olive oil and sliced fresh hot chilli.

I use a grilling pan that has the raised parts so you can get a nice char on the chicken, yum... 

Put a little olive oil to help it not stick and to help it cook without being too dry. Heat the pan nice and hot and put the chicken into to the pan. Toss the chicken around and turn down the heat half way and cook for about 10 minutes until cooked through (needs to be white ;D). When cooked put in a bowl with a cover to keep it warm and put to the side.

TIP: You can cook the veggies at the same time as the chicken if you have enough room in your pan!

Add the spears to the grilling pan for about 3-5 minutes with some olive oil, they don't need long at all - I like mine a little crunchy.

Take the asparagus spears out of the pan when they have a little colour and cooked, cut into  1.5 cm pieces (or leave whole if you prefer!) and put to the side.


Cut the capsicum into thin strips and to the grilling pan for about 5-8 minutes with some olive oil, I like mine with a little black char on them.

Take out of the pan when they have a little colour and cooked (soft), cut into smaller square pieces and put to the side.

Green Beans & Baby Corn

Blanch or steam the green beans and baby corn and cut into small pieces and put to the side.

Combine the ingredients!

Once everything is cooked (usually only takes about 10-15 mins) I start combining the ingredients, starting with the olives, which I have cut in half, adding a little juice from the olive jar for additional zing to the dish. Then I gently toss through the capsicum, asparagus, beans and corn. 

When it's combined well, add the chopped continental parsley and stir through with the juice from a fresh lemon.

Add cracked pepper and if you add salt to your dishes add salt. I don't add salt to my food as I use the natural saltiness of foods like olives to do that.

Season to your own taste. :)

Plate it up with the chicken on the top of the Cous Cous with some continental parsley for garnish (if you wanna get fancy like me ;D) and WHOLLAH!
