{ Recipe } Breakfast - Omelette, Avocado & Bacon Stack

Recipe

  • 4 eggs
  • 1 Tspn Chives - chopped
  • 1 Cherry Tomato
  • 1/2 Avocado
  • 2 Rashers of middle Bacon

Method

  • Cook the bacon how you like it.
  • Mash up 1/2 an avocado (add a dash of lemon to it.ins
  • First omelette - Crack 2 eggs and whisk them together.
  • Chop the chives into 8 mm pieces. Add them to the eggs. whisk gently to combine.
  • In a small medium heated fry pan, add the first batch of egg mix. Let it cook on one side then when firm enough, flip the omelette to the other side for a few minutes.
  • Once cooked put to the side (use al foil to keep heat in.
  • Second omelette - Crack the next 2 eggs, whisk and add chives. 
  • Cook and flip cook other side.
  • on the top of the first omelette, add mashed avocado then add the bacon rashers, place the second omelette on top and put the cherry tomato and basil on to with some chives to dress it. Enjoy!
