Tomatoey, veggie Soup with avocado creaminess!

Keep the cold and flu away this Winter with this easy tomatoey, veggie soup with avocado creaminess! No need for cream!



1 tbsp olive oil

60g butter (not margarine - real butter)

2 garlic cloves, crushed

1 large leek, sliced and chopped

300g carrots, sliced and chopped

1 large zucchini, sliced and diced

600g tomatoes, chopped

1-2 ripe avocados, skinned and seeded

1 tbsp basil leaves, finely chopped

1 tbsp coriander leaves, finely chopped

4 cups chicken stock

Optional Garnish:

100g Grilled Breast Fillet Chicken, sliced

1 tbsp basil leaves, finely chopped

1 tsp Ground Cayenne Pepper

Optional Side Dish:

Serve soup with toasted Turkish bread


Step 1

Heat oil in a soup pot over medium-high heat.

Add leek and garlic. Cook, stirring, for 3 minutes or until leek has softened.

Add carrots. Cook for 1 minute.

Add zucchini. Cook for 1 minute.

Add butter, stir through to coat veggies.

Add tomatoes. Cook for 1 minute.

Step 2

Add stock. Season with pepper and a little salt.

Cover. Bring to the boil. Reduce heat to medium-low.

Simmer for 15 to 20 minutes or until carrot is tender. Set aside for 5 minutes to cool slightly.

Step 3

Add basil and coriander. Add avocado. Add another one if you require more creaminess.

Blend with a hand blender in the pot or in batches, until smooth. Serve.

Garnish with the sliced grilled chicken breast, a sprinkle of basil and cayenne pepper. This dish is delicious served with fresh, toasted Turkish bread with butter, adds crunch and takes the bite out of the chilli.
