Chilli Spiced Cauliflower & Broccoli Soup

Ingredients

1 tbs olive oil

60g butter (not margarine - real butter)

1 brown onion, coarsely chopped

2 garlic cloves, crushed

1 cauliflower, cut into florets

1 head broccoli, coarsely chopped (including stem)

1 zucchini, coarsely diced

1 litre (4 cups) chicken stock

1 tsp Ground Sage Leaves

1 tsp Ground Cayenne Pepper

1 tsp Salt & Cracked Pepper

Optional Garnish:

1 small red chilli, thinly sliced

Optional Side Dish:

Toasted Turkish Bread with butter

 

Method

Step 1

Heat oil in a large pot over medium-high heat. Add butter, onion and garlic; cook, stirring, for 5 minutes or until onion softens and butter is melted. Add, ground sage leaves, salt and cracked pepper; cook, stirring for 1 minute or until aromatic. Add cauliflower, broccoli and zucchini; cook, stirring, for 5 minutes or until cauliflower is slightly tender.

Step 2

Add chicken stock and bring to the boil. Reduce heat to medium-low; cook, partially covered, for 20 minutes or until tender. Remove from heat. Set aside to cool slightly. 

Step 3

Blend cauliflower mixture, I used a hand mixer straight in the pot, or you can do it in batches, until smooth. Return to pan over low heat. Taste and season with salt and pepper. Divide among serving bowls, top each serving with a garnish of cayenne pepper (optional but tastes better with it) and fresh red chilli and serve immediately.

This dish is delicious served with fresh, toasted Turkish bread with butter, adds crunch and takes the bite out of the chilli.
