Chargrilled Vegetables Warm Summer Salad
Time: Prep 5mins | Cook 10-15mins | Total 15-20mins | Serves 2/4
Ingredients:
- 1/4 of each Colour Capsicum/Peppers (Red, Yellow, Green) Cut into thick slices
- 6 Cherry/Baby Roma Tomatoes Whole
- 1 White Onion Sliced
- 150g Beetroot Slaw (Coles/Woolies/Aldi)
- 1/2 Tbsp Extra Virgin Olive Oil
- 2-4 Tsps Red Wine Vinegar
- 1/4 Danish Feta Cheese Crumbled
- 1/2 Tsp Ground Turmeric
- 1/4 Tsp Cayenne Pepper
- 1/2 Tsp Poppy Seeds
- 1-2cm lengths 1 Tbsp Chopped Chives for Garnish
- Salt & Pepper to season
Method:
- Cook all vegetables until soft in oil on the BBQ, then add the red (or white) wine vinegar until slightly charred
- Add all cooked veggies to a bowl
- Add Turmeric and Cayenne and mix well
- Add Poppy Seeds (or Sesame seeds)
- Add crumbled Feta cheese and gently toss to mix and coat with oil and flavours
- Add chopped chives to the top
Serving Suggestions:
- Serve as a side dish to fish like, Bream, Snapper or Barramundi with toasted crusty bread.
- Or add chargrilled chicken or prawns mix well to make a meal on its own.

Notes:
You can add other veggies like zucchini, eggplant (aubergine), mushrooms, squash, asparagus or other veggies that BBQ well.
