{ Recipe } Bacon Stuffing Pods


Hey Mummabears! This recipe is sooo hard ;P nahh just kidding, actually it's so easy you could do it with your eye closed, best of all it's cheap as chips!

A great side dish to any good ole Sunday roast dinner. I made these as for Hubby on Father's Day dinner on the weekend they were all gone by the end! He looooved them! He must thinking I'm fattening up or something! hehe

  1. Middle Bacon Rashers - use how many you want to serve
  2. Stuffing mix (packet or homemade) I used a Gourmet Stuffing with Cranberry, Apple & Sage but you can use whatever you like, make your own even or make it with gluten free mix. 
  3. Olive Oil spray
  4. Optional - Pizza cheese


Simply grab a regular muffin tin tray, if you don't have one you can improvise with other pans, you could even use wet string and tie them up around the middle if you want to.

Make up your stuffing in a bowl on the side, as you would normally with a little hot water and your stuffing mix.

Spray the tin with Olive Oil and place the bacon rashers in as many cups as you want to make. 

Make a small palm size ball with the stuffing and put the ball on top of each of the bacon cups you have made.

And... that's it!! :) Whack'em in the oven for about 10 minutes and Bob's your Uncle!

Cook for about 10 minutes or until the bacon and stuffing looks nice and crisp on the top. 

If Adding Pizza Cheese:

If you want to add the cheese on top for an extra treat, cook for a 5 minutes remove from the oven, sprinkle a little grated Pizza cheese on some of them and put them back in the oven for a further 5 minutes or until golden brown.

Let cool for a few minutes then place in a bowl with some sprigs of Rosemary or Thyme to make it look preettty :) then serve up with your roast dinner meal.
